According to the wiki, exotic feast is the best healing food for human thralls at 10 hp/s, while cooked pork rinds are the worst at 1 hp/s. Gruel is a generally good food to give your fighter thralls, as it gives a 14% chance boost to strength at level up and gives 6 hp/s.
Certain foods also provide a temporary boost or penalty to current stats. Gruel gives +10% to strength and cooked pork rinds give +25% to strength. I haven't seen any of the stat penalty foods myself, but I have heard there are some that can give -10% to strength also.
