Sea of thieves, Escape From Tarkov, Scum, Mount and Blade: Bannerlord, and Astroneer are some games that have [F]. Its probably closer to a 75/25 split but looking around for a minute you are right about [E] being fairly dominant choice developer side though any game with lean mechanics will most likely be using [F] for interaction.
Open Input.ini
Use the search thing to look for Key=E or Key=F, and change those.
I haven't tried it, but it may work.
