AMD Green Screen of Death about twice a game
What is causing this? Only Conan manages to crash my game when a background application tries to get attention, but even when I make sure these aren't running, I still get a more serious crash, of not just the game, but my entire Pop! OS system, at least once a session.

It could be some linux OS/ gpu driver issue. Update to latest version if not already maybe?

There was an issue with AMD gpu's and or cpu's that used to cause the red screen effect when you took damage to not go away when you healed. The fix was some edit to a config file. That is the only AMD issue I can remember. You might try the official forums.

Just a tip it would be good to write what kind of GPU you got as well. ^^

Thanks, I will have to suffer through it, they almost never bring out new drivers.

Check your game mode setting. See if that helps.
With that enabled, it pauses other background processes while you're playing the game.
Side Note: Ensure your mobo has the TPM. If not, that could be at the root of your issue. I was plagued with hard freeze (system lockups) before I upgraded my whole system which before did not have the TPM.
