If you only need a bit of star metal, it may be easier to knock out and enslave any of the Cimmerians around the Mounds of the Dead that have star metal weapons or shields. While a thrall will lose armor upon being tamed, they keep their weapons and shields. Then you can break them down in a dismantling bench.
Single player definitely seems like a lower priority for them.
If that level of manipulation is too much of an exploit for you then as mentioned above, any cimmerian thrall can be knocked out and tamed for their weapons, i believe you can also dismantle some legendary weapons for star metal and you may occasionally find it on cimmerian thralls and inside their chests, i think the frost giants also rarely have ore or bars on them. The advantage of these methods gives you something to do while waiting for the meteors.
Alternatively if you just want a decent damage weapon without the grief of farming star metal, you might consider going the dragon bone route, most the damage stats are comparable but farming requirements are much lower.
Yeah those issues are annoying.
However there is a trick i've found with the "vanishing bodies"
If you leave a thrall or pet near knocked out NPC's that area will stay rendered for longer.
If you're fast enough you can teleport home with a knocked out NPC, stick it in a wheel and teleport back to where you were to collect other knocked out NPC's without them vanishing.
I've not tested how long it takes for a body to vanish around left behind thralls but i've managed to snag multiple thralls from the same location by doing this in single player so it does work.
The main thing to watch for is enemy respawns as they will spawn back when you leave the area and can attack your thrall while you're running back.
