The person making the rhino saddle needs the Siptah DLC.
To tame a rhino, you must finde a calf. They're at siptah as well as on exiled lands.
You need the Siptah-DLC for the saddle to make!
There are no "greater" rhino-calfs. And adult rhinos can't be tamed. You have a chance to get a greater rhino, if you use an according food at the animal pen. (to make an adult pet, you only need ONE food. This will be used automatically, as soon as you put in in the pen.)
If you got a greater rhino, because you used the according food, you won't be able to ride it. At least according to the wiki. (I didntT test it... yet.)

kidnap rhino babies and raise them in a pen.
This will also get you the workbench for saddles. You need leather (hide doesn't suffice. You need to make leather out of the hide in the tannery. Just buld it, put bark into it, and the hide, Then you can start the process. You will get normal leather eventually, And - more important imho - tar. Tar is needed to make steel later. You can use any hid, but I would prefer light, because that's the most common. You might need outher hide-types for special armors. And be careful, if you get your hand on elefant- or rhino-hide. This is needed for medium and heavy paddings (especially the prefercted ones.) You can also make thick leather out of those. (at the tanners table)
You should be able to make a light saddle with leather and twine.
As said, Rhinos a tamed in an ANIMAL PEN, while horses are tamed in a STABLE.
pens are learned in the knowledge-tab under "survival"
If you want a ridable rhino, feed it common fiber plant in the pen. This will make sure, you won't get a greater one. (which can't be ridden.) The first food, you put in, will be used. You need only one unit. (in comparison to ARK, where you need to contantly feed your pets, In conan exiles food is only used to heal. And special food will change attribute-growth-chances, depending on the food. And for taming, you need only one unit of food.)
Depending on the type you can have better chances to get a stronger version of your target-pet.
Horses, however don't have that And all food provide a 25% chance for the 4 horse-types, you can get. Those types are only skins, however. You can use a special food (created at the alchemist-bench) to change the skin. But only if you didn't put your mount in the world, yet. There are also other Rhino-skins.
Step 2) Press your interract key (I think it's E) to pick up the baby Rhino and put it into your inventory.
Step 3) Go back to your base and build a small animal pen and place the Rhino and it's favorite food inside to start the taming process. A Rhino will love Aloe Soup, Midnight Blue Flowers, Dried Berries, Shadespiced Bark, Bark, Desert Berries, Vines, Plant Fiber, Highland Berries, and seeds, IN THIS ORDER from best to worst.
Optional step 4) If you want to use a skin for the Rhino, after it's done being tamed in the animal pen, put it into your inventory and go to an Alchemy Bench to craft the Fodder for the skin you wish to apply to your Rhino, and then with both Rhino and Fodder in your inventory, you apply the skin through a crafting menu in your inventory, on the right side of the screen, it should be near the bottom of the crafting recipes.
