Citadel forged with fire is fantasy the whole system is around spells though and has building in it but I never really came to like the game ultimately but might be worth a look for you.
Space engineers doesnt offer the greatest combat solo without mods but it's quite explorative on the imagination and build your own anything front, closer to realistic then fantasy. A very technical game though it's a learning curve that takes time.
Empyreon I hear is good, it's got building and some fantasy but I have personally only played a little of the game but also build your own mechanics its lighter on the realism and probably more solo friendly then space engineers if that's your thing in the end.
V rising is a game where you play a vampire, its top down though not 3rd person got good combat and some base building, I enjoyed it for the most part not a 3d plane building though but does have base building because its top down it's more 2d....
An honorable mention but isn't what you described looking for is raft, where you build a boat and take it to the resources rather then running around yourself and offers creativity of design, but I have heard some find it more unpleasant solo a game like raft but different is also stranded deep.
Ark is single player as well.
But yeah dinosaurs. I'm not fond of dinosaurs myself either. You could play the crystal isles map in Ark for the fantasy creatures. Or the Ragnarok or the new Fjordur map to get that viking feel. There's mods like eco's empires that has viking skins and prefab houses.
But yeah, tried ARK several times, it just turns me off with the convoluted UI and mechanics, building stuff isn't fun at all, constant inventory management because a bush gives 5 different berries yet you want fibres (exaggerated for effect), and the characters look, like, PS2 level bad (again exaggerated for effect).
No Man's Sky is actually good now I'm told (even though I can't get into it - something rubs we wrong each time I try and then give up after a couple of hours, but that's purely me), and yeah it's not fantasy but looks fine and you can build quite the sprawling bases.
7D2D doesn't look that bad nowadays, but yes there's this undeniably Minecraft-y blocky feel to everything (and the toons look worse than in ARK, yet the vendors look like higher tier paid Poser or Daz3D models - it's quite jarring).
Gameplay is weird though and it's definitely an aquired taste - not to mention the perpetual "Early Access" thing which doesn't really help.
As mentioned, nothing quite like Conan really, which is a shame because I'm just about done with it.
There are several mods now that let you sort your inventory into your storage chests with one click. Structures+ is the main one, but there are others (the HG or Arkitect ones for example). The tech is optional, you can ignore it (there's even a primitive+ overhaul of the game apparently that's part of the game itself). But if it's not for you, it's not for you. I would welcome a fantasy or medieval survival game as well, but it doesn't look like there is one. At least not of sufficient quality.
(ps - I have recently put in an obscene amount of time on the demo for Fountain of Youth, survival in a completely different setting, but it looks quite promising at this stage IMHO)
What ever.. I would recommend trying Dark&Light, although it's another abandoned Snail game left to rot on Steam, it still offers quite a bit of fun game play. It has animal taming and magic in open world, both PVP and PVE servers, though I can't recommend PVP because of all the bugs and exploits in it.
Worth a try at least if you get it on sale.

ARK is a bad game in pretty much every aspect other than filling the dinosaur fetish niche.
Savage Lands is a bit rough around the edges but it's a fantasy survival game with some crafting and building. Haven't played it much lately so I can't really say how it feels/plays now.
This might not suit you but you could take a look at Dragon Quest Builders 1&2. Apparently they 2nd one is quite good. Probably not the near perfect game the reviews claim, but I tried the demo for the second one and it was okay.
If you don't require both third person and/or fantasy then maybe check out Icarus, Subnautica, The Forest, Stranded Deep, Green Hell, and Volcanoids.
I also agree with some of the others about Ark/Atlas - not a fan of either of those games. Something changed a long time ago in Ark, it used to be decent but then it just started going downhill at one point, I remember the graphics were downgraded significantly, and it got really janky (yes, they managed to add more jank) and buggy after that. I just can't get into it anymore. Uninstalled a while ago to free up a *lot* of HDD space.
When trying to find a fantasy game that's similar to CE your realize how few games out there really compare to it. It's almost like D&D and Minecraft got together and had a baby.
