The devs kinda hid this too well and I didn't manage to find the exact code for it fast enough so I just tested this the "old fashioned" way :D Made two horses, one with high agility, the other with low agi.

As you can see the main difference is the spreading of the aiming reticule. On the horse with agility it stays on the screen until you start sprinting, while on the horse without agility it almost instantly spreads and disappears as you start moving.
I actually forgot to include shots while moving at full speed which would've been one of the goals (it just feels super unnatural in this game due to the camera forcing forward so it's much more natural to quickly stop and shoot), however I did test that too and while it does "seem" to affect actual arrow spread a bit, from the attempts I made it wasn't anything drastic (both horses were slightly off-target randomly when moving at full speed and the one without any agility didn't shoot with a crazy spread as the reticule seemed to imply)
It's kinda funny that the dot is still there in either case.
Anyway as a conclusion - in my playstyle where I stop for a second to aim like you see me do there it doesn't really make enough of a difference for me to start feeding agility food to my horse, it's not even noticeable as the reticule comes back instantly as you stop. If you're constantly shooting without slowing down (chasing targets in PvP maybe?) then horse agility "can" help.
