Just to confirm, you are using a Truncheon and not the actual stone club right?
i have german version , name is "Knüppel" and it says you can knock out enemies , and it looks like in videos club . dont know is tere are difference between club and truncheon , i have bindings but im allways dead because they kill me when i use club because takes very long . can i use first sword and than at end switch to club ?? my level is 45 and armor 177 middle , is this enough?? and play usually easy online server

Using your sword will not build up any knockout unless you have blunt mod applied but even then you may still do more damage than knockout. Have to just get good with timing and swinging.

As others mentioned, you can reinforce the truncheon with the simple blunted weapon fitting.

Also, watch the enemies health bar. One bar is red (health) and the thin white one above is like a stamina meter that when reduced to zero will knock them out.

I did not know about the stamine bar , i will try again , but really hard most time they kill me bevore i knock him out
That was supposedly fixed, as it wasn't intended to work that way.
If you have an alchemy table, you can make yellow lotus potions. That will reset your attribute (and knowledge) points. So you can reset, put everything into Authority and whatever else (not Strength, as that may increase the normal damage truncheons do) to be better at knocking people out, then afterwords reset again and go back to your other attributes. You can do the same thing with Expertise for a gathering build with unlimited weight and increased gathering speed.
One drawback of doing so is having to respend all your points. There are better potions that only reset one of these however. The other drawback is if you have corrupted your attributes, you will have to go back and do that again.
