I think because hide isn't really "Needed" until later, so hiding it behind iron seemed right, plus skinning with stone would likely butcher the hide.
@Kashra Fall, what do you mean hide isn't "Needed?" Isn't hided need for light armour? That is needed for mining Iron? Or are you saying that Coarse Fiber Armour is enough to get near Iron nodes?
you can harvest hide from animals and humans by hitting them with an axe or pickaxe but a skinning knife is slightly more effective compared to that. if you harvest everything you kill using an axe, you should not have any problems with hide for the first 25 levels
From what you are saying it seems to me that you are going on big trips to get resources. I found it easier to build a number of small bases near resources I want. For example find an iron rich area and build a small base. Put a bed roll and some chests in there. You then have a safe place to mine from. Also there is a lot of hide around. Kill antelope (they die with one head shot from a bow) for lots of hide.
