Report a translation problem
The box on the left side of the inventory window shows what you have on your person. Normally if wearing no armour, crafting one will auto equip it to your character. Weapons and tools auto equip to the hot bar.
I'm not as familiar with the controller interface but i believe there is an item selection wheel you can bring up, you'll have to look up the controls for it though, weapons and tools should be choose able from there, but once again you will need to craft them first.
As an example, pressing attack on keyboard will just swing your characters fists, unless you directly select a tool or weapon from the hotbar (in your case the selection wheel), or alternatively unsheathe the last thing you used.
I don't even see a spot in my equipment section for "weapon", I see head, chest, feet, hands, etc., but no "main weapon" "offhand weapon" etc. I am at the very beginning of the game, does this matter? Do I have to complete some sort of task/quest first to be able to access those equipment slots? Thanks.

As for off hand, they can be used at the same time as a one handed, so sword and shield for example each will be placed in the hotbar / selection wheel and chosen as needed. So you can have just sword, just shield or both, or alternatively a tool and shield and so on.
why on earth do i need to put a shield in a hotbar/wheel to equip it or ditto a piece of furniture in 2 steps just to plonk it down somewhere?
the problem isn't the wheel itself, but a lack of options to do same thing from the inventory directory.
similarly.. seems stupid if you skin something.. there's no meat left. i can understand 2 tools for different things... or to make things grindy for sake of gameplay.. but i can't understand why tools can't be auto switched by simply using interact on target if you have the right tool in your inventory somewhere.

meh. loaded it up again and can't get the wheel to show up outside of inventory screen... inside inv screen all i can do is add/remove stuff)
the game expects you to choose what you want, decide if you want to farm hide, meat or bones. you cannot auto gather because the game does not know what you wish to get out of the corpse.
