Fluid press doesn't have a Thrall slot. No idea about the other ones, though I'd expect that the Artisan's Table probably takes a Carpenter (that is pure speculation however so I couldn't say for sure).

I’ve got an armorer at my artisan station, so I guess it’s not too picky.

No idea on the drying rack though.

I've tested thrall assignment to artisan's bench:
Carpenter, armorer, blacksmith - can be assigned and crafting costs are reduced
Smelter, tanner - can be assigned, but no effect is applied
Cook, alchemist - cannot be assigned
Priests - haven't tested this option
And, needless to say, soldiers and dancers are no go
