Your ticket in single player is I think there is a mod that takes down the hp of a lot of the world bosses to a manageable number for you to solo. Otherwise your weapon would wear out well before it died.
One of the few bosses I killed before installed the boss health reduction mod, and one of the reasons I decided to install that mod lol
Basically, stay directly in-front of it but not too close... wait for it to attack you with block up, and retaliate immediately afterward with one single hit... I prefer on heavy attack, but you can do light if you can reach it.
Either war axe or sword works for heavy attack since they launches you forward, but you have just enough time to return to your position (walk back) since if not, the boss will hit you over the shield ignoring block.
It was a tiresome and totally pointless exercise, since at that time the chest behind it contained just pure garbage.
So all in all was ~30 mins of doing the exact same move time after time... until boredom came and I made a mistake and had to take a healing item and wait a few cycles to attack again.
EDIT: it helps if you have the poison immunity perk, but it's not needed... as shield blocks the poison too... but if you get hit frequently, it'd certainly help. First time I fought it I didn't had it myself, and second time I fought it (the one in the Arena this time) I had it... bu that time I already had the boss health reduction mod, so it went down more quickly... still a chore, though.
