Aren't you looking for the recipies in the cauldron? (You know, the same way you load hides into the tanner or ironstone into the furnace by pressing E). The recipies should normally show up there once you open it.
There are certain recipies that won't even show up unless you have a medicine man thrall stationed on the cauldron, but they'll show up next to the thrall.
Both of you are right, There is an Alchemist Thrall in the game for the caldrens. The only way to tell them appart from a cook is to see what type thrall they are. Last time I chacked, the Alchemist had the same Icon as a Cook.
