Where to get hides?

Try using an axe, Blunt weapons seem to not give hides.

if you are looking in their inventory for loot, you wont find any. you have to hit the corpses like other resourses

the gazell normally drop one and so do baby shellbacks. Not sure what other animals give what.

Do you cut the bodies up with an edged weapon (Pick, Hatchet, Sword?) You don't loot them by interaction. You have to harvest the bodies and you won't get hides all the time.

I have gotten Hides (and meat) from Imps, Humans, Shalebacks, (also Little Turtles), Hyenas, Rabbits, and the Various Deer type creatures). Can't recall if I got any from the Ostriches or the Rocknose.

I have had good luck with hide drops using the stone sword. Was able to get the 20 for the water bag in a few minutes of farming. Not sure if it was RNG luck or the tool, though.

Hyenas and Antelope give the most, and use an Axe if you don't have a knife to get the most. You can generally get 3-4 per (and I had one that gave 9 last night) if you use a hatchet.

The gazelle gives ton of hides if you cut it up with the sword

I have gotten as many as 12 off of a single gazelle by using the stone dagger. Just equip it and then press your offhand button and you'll use your dagger on a corpse and get an achievement too.

Use a Dagger.. they specialize in hide gathering.
iron is probably the highest you will ever need.
