Scout:
Shortstop or Soda Popper. Stock is also good. FaN too, but people hate knockback.
Mad Milk or Crit-A-Cola. Bonk has some niche applications.
Fan O'War (do not upgrade it because "Well, I'm a Support Scout after all"). Sandman and Atomizer are also good.
Soldier:
Beggar's Bazooka is overpowered. Stock, Black Box and Cow Mangler are good. Air Strike is gimmicky, but fun and strong.
Any Banner. Bison if you're looking for funny ways to shred tanks.
Any melee. Equalizer if you're looking for funny ways to shred tanks.
Pyro:
Phlog or Backburner. Dragon's Fury is an interesting choice. Careful with stock and Degreaser, because airblast is controversial, to put it nicely.
Detonator or Thermal Thruster. Gas Passer and Scorch Shot are controversial. Flare Gun is fine too.
Third Degree, no doubt.
Demoman:
Stock or Iron Bomber. You can probably equip a passive primary if you main stickies.
Stock or ScoRes. Shields are good if you main pipes and you don't need to drop Übermeds.
Any melee.
Note: Demoknight is viable, but requires some upfront cash to start popping off. He basically plays like a more expensive MvM Pyro.
Heavy:
Stock, Brass Beast or Huo-Long Heater. I don't recommend the Brass Beast if you haven't played in a while. Use the Huo-Long Heater instead if you want that extra damage. Natascha if you hate Super Scouts, but you lose a lot of damage.
Any lunchbox item.
Any melee except Holiday Punch. Warrior's Spirit is an interesting niche against tanks.
Engineer:
Any primary, even the Pomson. I prefer the Widowmaker.
Wrangler.
Jag or stock.
Medic:
Any primary. Usually the crossbow, but I prefer the Overdose. Mad milk syringes are a fun niche if you remember using them.
Any medigun. Yes, there is more than the Kritzkrieg in MvM, and they are all strong in their own ways so there is no number one.
Übersaw.
Sniper:
Any sniper rifle except the Classic. Huntsman is good too, but then you're not exactly playing Sniper.
Jarate or Cleaner's Carbine when tanks arrive. Any secondary works though.
Bushwacka.
Spy:
Any revolver.
Any Sapper. Red-Tape Recorder has an interesting interaction with Engi bots.
Any knife. Stock recommended. YER is nerfed for this specific gamemode though. It's not terrible, but what's the point in using it?

That being said, these guides give more detail to what I've listed. You will see that a lot of these "bad loadouts" (as Rando puts it) will show up in there as well (why does a guide list bad loadouts though? HMMM). I just don't have quick access to these guides, which is why I wrote all that out.
this is a good list except never use huo
most spy knives are terrible. only consider stock or BE. kunai can be ok if you are cheeky and dont mind dying in the most pathetic ways you can imagine.
Rescue Ranger: To heal your buildings from far distances
The Wrangler: To control your sentry, also to take down giants
The Jag: Quick building
For Medic-
The Quick-fix: Faster healing when Uber charged, also to get your allies back on there feet
The Crusader's Crossbow: To heal allies from a far distance
Any melee weapon
milk usefull only vs giants (if team not KoS lol) and bosses
