use gun to kill low health people if it's safe
try to avoid suicide stabs unless it's worth it (like a medic about to get uber)
dont run into huge groups of enemies expecting to get a giant chainstab youll probably stab one guy (maybe) and die in .2 seconds
step 2: Change to any other merc
step 3: profit

Spy on pubs is pretty easy to learn and be effective with as long as your team have enough power classes to distract enemies (and your team doesn't have 3+ spies to make them paranoid). But if you ever want to play spy in competitive, prepare for big ass whooping. It's a completely different game there and your gun and team coordination matter a lot more.
1. Killing good targets (aka anyone it just varies of importance from class to class.)
2. Getting rid of engi buildings
Then you're set, it all just depends on how you do it.
Be patient. Spy is one of the hardest classes for new players.
