I don't really see TF2 as a relaxing game because the fun part is gameplay, and both Medic and Engineer are the antithesis of that; they're nothing.
You've never played as a sneaky stealth engineer who sneaks around behind enemy lines and leaves sentries in unexpected places.
Engineer is well... he is engineer. But his teleport is one of the best ways to make a shortcut to the front, or behind the enemy's back for a surprise attack.
Or I could play Soldier, Demo, Scout, Heavy, or Pyro and actually contribute to the match while not frustrating people by throwing.
You can contribute to the game without playing the 100% most meta way, especially on a normal pub. A lot of the people on these servers aren't even that good at the game, so you don't need to be a 20-killstreak all-stock soldier to help your team win.
In other words: It's not boring, it's masochistic.
Engineer can be boring, but it's because most people do boring stuff. Standing in the same spot and constantly whacking your sentry is boring. Playing more actively would make Engineer feel more fun, even though there are still many boring things about Engi, depending on how much you enjoy builder classes.
Battle Engineer is a fun and viable playstyle too, especially because you force your opponent to fight two entities at once.
Also, many would instead use the word "relaxing". Some use it as a euphemism, others are genuinely enjoying the laid-back gameplay (or in the case of Medic, very frequently the newly discovered circle of hell).
You quite literally need to carry your team to win in most matches. In fact, I wouldn't doubt that most casual matches are determined by only 3-4 players out of the 24.
