How do I sap a sentry and kill the engineer in one piece?
Always. In CTF, I go scout, rush through and check enemy intel for sentries. If there are any, I go spy, and sap their sentries. But these engies always spycheck everyone who enters, making it impossible to sap their sentry. Sometime the engineers believe that I'm a teammate, and can get a sap or 2, destroying the buildings if I get lucky. Any tips for spy? NOTE - Soldier/Demo isn't my taste.
My Spy Loadout -
Dead Ringer
Spycicle
Red Tape Recorder
Default Revolver
Disguise Kit (duh.)

there's your problem op. You'll almost always get caught using dr. Go stock invi watch

Red tape recorder is only for sentry nests.
I would say use a silent invis watch (not dead ringer).
However if the engineer(s) know what they're doing it will be hard even for a good spy since there only need to watch 2 entrances so you will also need some luck and good timing

Players will find you as a spy if you are facing at them. Try looking towards your teammates, leading them into a false sense of security. Try using the Cloak and Dagger for when a disguise is not enough. I recommend a Pyro when using the Spycicle to muffle the "Fire!" sound.

diamondback comes in handy with engies

If there's multiple Engis, use the Tape Recorder to weaken the buildings, and try and get some help from some teammates to destroy them. It's hard for even the most experienced Spy to take a large nest down all on his own.

If there's just one or two, try and wait until only one is in the room. Use the Sap and Stab technique if possible, sap the buildings and try and follow the Engi, be ready to backstab him as he tries to save one of the buildings, as well as immediately sap it again in case he does manage to save it right as he dies. If the Engi chases you, use your Revolver. If both Engis are in the same room you'll probably need some help to take them down, or try to distract one of them, lure him away from the Sentries and then kill him, so that you'll only have one Engi protecting the nest.

Hmm, I will try these methods. Thank you all.

1. Use a different loadout: CnD, Spycicle (for Pyro spychecks) or YER (for backstabbing unaware spychecking Pyros), Anything that is the same as default, Any

2. Go with a suitable disguise, for example: IF there are many engineers then go engie to avoid being caught, never ever disguise as a class that is not on the other team

3. Sap then stab the engie with your knife of your choice BUT if you want this to be easier, use YER so the sentry won't target you when the engie removes it

4. Never try to attack the engie nest when there are other enemy players around unless your teammates are distracting them

That's about everything I know

If the Engineer smacks you, get on their dispenser and wait, then you can idle there for how long you want.

Or you could go soldier.

the main thing ive found to work for me on 2 fort is let him whack you jump up on his gun run to his disp undo the dr if he's outside and just sap his stuff

another thing have you tried shooting his stuff? while a sapper is placed you can speed it up by giving his stuff a few shots

Well, first thing first:

Dont use the dead ringer when infiltrating a sentry nest or even just a single sentry. Stock or CnD is way better when trying to get in there.

Red Tape should also only be used when there are multiple engineers. If there is only one engineer, use stock.

With that out of the way, what I do is usually sit on top of the dispense, waiting for the right moment quickly decloak, stab the engie and then sap. (Other way around can work too.)

I've seen spies do but I can't get the hang of it - How do they stab and then sap so quickly? or sap and then stab before the engie removes the sapper?? D:
