they're not video files, simply "replays" from your point of view
that guy above me posted a link to a video that explains them well enough
you simply record the demo before you start playing, and can then play it back later
i suggest looking up PREC; a plugin that automatically records demos for you
as for recording the actual video;
do you have an nvidia gtx600 series or higher video card?
if so, you can use shadowplay to record
several streaming programs like XSplit or OBS can also be used for recording local video files
dxtory is also an option, although it works best with multiple harddrives

No I don't use that series I use another. But I think I'll be able to get what I want
with the demo files.

it's recording the status of the game world during each server frame/tick
where every player is, where every bullet is being fired, etc
it basically records the status of the game that your client was seeing while you were playing, and then plays it back in the exact same way
sort of like a cutscene in a video game, being played back the same way every time with certain actions set to happen at predefined points
once you have your demo ready, you start recording with your actual video software

Sorry if I'm being the dumbest noob right now, but this is my first time experimenting with recording actual gameplay footage without FRAPS. I use Sony Vegas 11 as an editor but still the video was horrid when rendering was finished.
