the grenade launcher forces you to balance both leading and managing the arc to deal damage. It deals massive close-medium range damage and two well placed shots is enough to dispose of most classes.
the stickybomb launcher is an incredibly versatile tool which allows for blast jumping, medium-long range spam, and clever traps. Though it takes nowhere near as much skill to aim as the pill launcher, you still need to know how to use it in order to be successful.
