Unaware if the attribute "rockets fly straight down the crosshair from the center of the screen" can be any helpful.
Stock is better for corner peaking, as the Rockets are angled slightly right (or slightly left if using left hand view models) which allows you to more easily peak targets. This can throw enemies off guard, and is what gives Soldier an advantage against classes like Heavy and Engineer.
The Original is easier to do wall climbs and pogo with; though since these are flashier rocket jumps not often used outside of Jump maps with the exception of majorly niche scenarios; it's really your preference which you prefer. The Original is easier to chain some jumps with thanks to the rocket coming straight down the middle of the screen.
