The only reason they support Linux is because Valve loves Linux.
More specifically, they literally have their own OS built on it - SteamOS - which, among other things, is what Steam Deck runs on. They're not going to have their own first-party games not run on the OS that they make.
If you're looking just at profit motives there's really no reason to support anything other than windows.
The only way TF2 could work on Apples computers with minimal effort is to run it through multiple translation layers that will heavily degrade performance.
aside from this macos has such a low user base that it's not really viable to make the game work on arm cpus
