You have the right idea; just use what you're most comfortable with, honestly. Good players would rather you use what you're good with rather than some "optimal settup" that they've seen work one time in a competitive scene.
Also, since you're going gunslinger, why don't you add pomson and short circuit?
And as far as the gunslinger loadout goes, I was kinda following a meta where the other Engies would use their stock shotgun, and I've never really taken a liking to using the Pomson because of how slow the projectiles are, as I find the stats incredibly situational.Though I may try using the Short Circuit for a little while.

As for defence, rescue ranger is pretty much a compulsory primary TBH. For secondaries, wrangler is overall a safe choice, for the extra range to harrass any enemies who peek. Short circuit is nice to use, if your team is having trouble with the enemy demoman. But some competitive play bans that weapon, so do some research.
Wrench types are chosen mainly based on a two factors: How your team plays, your personal ability to fend off spies.
Firstly on "how your team plays", you have to ask your team mates what are their respective playstyles. These "team mates" are usually the combo (heavy + medic), and the pyro. If your team combo likes to play aggressively, then your team pyro is bound to follow them as well (because pyros protect combos bla bla), leaving you alone behind. In this case, you might want to consider the Southern Hospitality or the Wrench, depending on whichever you are comfortable with, to deal with the enemy spy.
Secondly, if you are rather capable fending off spies on your own, and feel confident using the Jag, then go for it. 2 or 3 quick and accurate rescue ranger bolts can easily take out the spy.
P.S. Personally I think it is a bad idea to go around wrenching spies, especially in competitive where they know how to trick stab. Good RR aim is a nice counter to that.
They won't consider you a threat and therefore won't kill you.
I used to constantly use the Wrangler until a while ago when it was nerfed, and ever since, I've been a user of the pistol as a higher dps close-range weapon.As far as the Short Circuit goes, it's banned in UGC Highlander and all other major competitive leagues as shown in the link from a previous post, though I do like using it for when there's alot of Soldiers/Demos in pubs.
For wrenches, I almost always go with the Jag because of it's ability to quickly set up a nest and move buildings around when needed.I know it's incredibly difficult to kill spies, and I can owe a couple of deaths to trying to melee them, which is why I often stay as close to my teammates as possible, so as long they're able to detect the spy, it'll be easy for me to stay afloat.
