it's a tale as old as time
He has good health, good damage, great mobility (rocket jumps). He has hit scan and several utilites with out weapons. I personally favor Stock - Stock - Equalizer. Some use the Escape Plan instead.
Demoman is the runner up and is a strong choice for pub stomping. There is something you need to understand about Demoman vs Soldier though.
Soldier IS a generalist. Demoman IS NOT a generalist. Demoman is much more focused on dealing damage.
He has a little less health than Soldier.
He has similar mobility than Soldier; however, he is more restricted in the mobility's usage compared to Soldier.
He is also more aim dependant than Soldier. (No sticky-spamming here)
What does Demoman have?
Raw damage potential.
The Grenade Launcher does 100 damage on direct hit with no fall off. Rolling grenades are fearsome; but, unreliable.
The Rocket Launcher does around 50-110 damage on direct hit. This depends on the range. The common medium range, I'd expect around 80 damage.
The Rocket Launcher does less damage; but, is easily to deal a lot of damage. The Grenade Launcher does more damage; but, requires direct hits.
What about sentry countering?
Demoman wins here. It's that simple. Demoman does more damage with his primary and has no fall-off. If he gets in a position where he can safely get direct hits on a sentry, he is dealing maximum damage on an immobile target. He can also take care of the sentry very quickly if the Engineer isn't in a position to quickly repair it.
So Grenade Launcher can work; but, it's not always enough. What now? Sticky Grenades! 4 Stickes instant kill sentries. Stickies are generally the most reliable solo-method to kill a sentry.
Now what should you learn? In all honesty learn both. Soldier is great, Demoman is great. Both is extremely powerful.
Is it that simple? No.
Playing the class isn't enough. You need to know what to do. In order to pubstomp you need to be aggressive; but, you can't be stupid. The answer is simple. GET CREATIVE.
Know the maps, know what you can do and how to do it. Use side passages and your mobility to kill key targets in the enemy team. Such as the sentry. Don't be the idiots that throw banana peels at the main choke and accidentally trip on them and die to a random critical face plant.
Learning the map is not as simple as it sounds. It means to know all the angles that you can attack from and how to get there. Knowing what ceilings have imaginary walls and what ceilings don't. Demoman is particularly great with these since his grenades travel in an arch.
It is also about knowing how to use the weapons availabe to you. Sometimes an angle of attack requires explosive jumping or possibly a sticky jumper.
Good reflecting pyros can almost always be turned in a gamble fight. Don't be predictable and it's a 50-50. Soldiers can also pressure a pyro by switching between shotgun and rocket launcher.
Heavy-vacc medic is not a perfect pubstomping combo. Heavy is generally situational. Phlog pyro + uber medic is stupid for pub stomping. "uber medic", you mean you want to pub stomp with uber charges all the time?
Pubstomping is perfectly possible with solo play. Soldier and Demoman are the only classives adaptable enough to do this reliable. All classes except Medic can pubstomp; but, most are situational.
Scout can't take damage and will struggle to dominate a grouped up team.
Pyro's range is super restricting and can struggle greatly against many sentry positioning.
Heavy is far too slow and can easily be over whelmed or out played by good soldiers and demoman.
Engineer is very powerful; but, good players can destroy a good Engineer if the engineer's team doesn't play like a team. He can also get overwhelmed by a bunch of meat heads running forward or a simple uber charge.
Medic is team reliant.
Sniper will struggle in close quarters and is not an objective-capper.
Spy is far too difficult and unreliable if the enemy team has decent players... Or pyros who flame everything in and out of sight.
Soldier and Demoman has the health, damage, and mobility to be extremely flexible. Soldier is superior than Demoman in that flexibility; however, Demoman some situations where he is better than Soldier.
If you must duo to pub stomp; then, you are lacking in various areas.

Soldier and Demoman can manage without a pocket for half the game. Definitely the better choices.
