why does it seem to crit a lot?

Because it does a lot of damage in a short time which increases the crit rate.

the more you do damage the more the crit chance

Crits are based on damage, Demos do a lot of damage. Melees crit more.

Demo does a lot of damage, skullcutter deals more, thus increased crit rate
