Is it that hard to guess?

Soldier, Demo, Medic, are projectile classes.

Scout, Heavy, Engineer, Sniper, Spy are hitscan.

Pyro has these weird boxes that act as the flamethrower damaging people.

But of course, these can all change when you add in unlocks.

In a way kind of, but not really, I'm not sure what they label him as.

More or less a mix. They stack as hitscan yet the flame acts as its own thing. I think it’s fair we call it a mix.

You can't label a class as either Hitscan or Projectile when there are countless of weapons to take into account. For example, consider the Engineer's new Short Circuit alt. fire. While his primary shotgun may always be hitscan, with the exception of the Pomson and the Rescue Ranger, you can still equip weapons that behave differently, and this goes for plenty of classes. Even Sniper's Bow and the Medic's Crossbow.

Like @Exquisite Bagel put it, it's not very hard to guess what is considered a projectile-based weapon and what isn't. If the Pyro's airblast can reflect it, then it is (probably) a projectile, and most of the aforementioned can be reflected. The rarest middle-case is probably the fact that the Dragon's Fury counts as projectiles, meaning you *can* actually reflect them, despite being their primary.

Lets check class by class, using only stock weapons for each class
Scout : hitscan, hitscan
Soldier : projectilie, hitscan
Pyro : kind of hitscan, hitscan
Demo : projectile, projectile
Heavy : Hitscan, hitscan
Engie : Hitscan, hitscan
Medic : projectile
Spy : Hitscan
Sniper : hitscan, hitscan

Of course, unlocks can change the way a class shoots (for example the sandman is a projectile that replaces the stock bat, or the short circuit is a projectile that replaces the shotgun hitscan).

Mostly (without unlocks that grant special stuff)
Scout Engy Heavy Sniper Spy: Hitscan
Soldier Demo Medic: Projectile
Pyro: Basically hitscan particles

Soldier has both hitscan and projectiles though.

Taking unlocks into account:
Scout: primarily hitscan with projectile options.
Soldier: primarily projectile with hitscan options.
Pyro: primarily projectile with hitscan options.
Demoman: projectile.
Heavy: hitscan.
Engineer: primarily hitscan with projectile options.
Medic: projectile.
Sniper: primarily hitscan with projectile options.
Spy: hitscan.
