There are so many places to put a sentry in TF2 there is no one correct answer. Sniper is actually a very strong anti-sentry class since you can stay well outside its range and start off with a 150 damage shot on it, then spam 50 damage shots. If the engi isn't sitting on top of a dispenser they will have to leave and get more metal to repair and you can finish off the gun while they're gone. If your team is competent one sniper shot and one rocket/pipe will take down a Lv 3.
With Heavy you can find objects to hide behind since he shoots from his eyes and spam with the Tomislav preferably. Sometimes just the cart is enough cover to take care of it in Payload.
Some spots, especially on Payload last, require coordination to take down nests and sometimes it just doesn't happen in casual.
Soldiers, Demo's, Ubers, ect. are all genuinely better...
Scout - Since Scout is hard countered by a Sentry, he has no prayer if it is being babysit by an Engineer. However, Sentries left out in the open can easily be dispatched by Pistol or Corner Peeking. You can also use the Bonk to bypass it, or surf off the bullet damage for some pretty flashy escapes.
Soldier - You are THE Sentry destroying class. Your Rockets are ideal for killing a Gun from any range, and your splash is great for pestering both the gun and the Engie from around corners. You can equip the Direct Hit to two shot a Sentry, or use the Backup to make your team able to laugh at it; either way you are designed to be comfortable against these so press your advantage.
Pyro - Stay away unless it is either built in a bad spot, or you have a Medic. A Pyro can Corner peek sentries; or leap on top of one and circle strafe to avoid being tracked by it; but these tactics are risky and won't work if the Engie is babysitting his gun. The best a Pyro can do is spam secondaries at it; or get a Medic to Uber him. If Ubered; you can two shot a Sentry with the Homewrecker; or W+M1 the whole nest down.
Demo - Another class built for Sentry destruction; Demoman is ideal as both Grenades and Stickies apply pressure to a nest, forcing an Engie to either turtle, or retreat. Demoknight however is hard countered by Sentries; and unless you can leap on top and strafe on top to avoid being tracked by it; you're better off sitting back and waiting for someone else to destroy the gun. Half Knights can do a middle road job.
Heavy - If the Gun is alone and helpless, you can 1v1 it and come out on top. However, if the Engie is babysitting it, your efforts will be in vain without a Medic's assistance. Still; Heavy is a great class for taking down Sentries due to the sheer amount of damage he can take. You can also corner peek it with a shotgun, but not the Minigun.
Engineer - Engie vs Engie shouldn't come up much, but the best you can do is build a tele and get your team up to help you. If you wanna be cheeky, try building a Mini or Leveled Sentry and Wrangle it to shoot the enemy Sentry from out of it's range, or pistol the Sentry down. The Engie can repair it but it will certainly be annoying for them.
Medic - UBER, UBER, UBER. Your Stock Ubercharge will pretty much ensure a Sentry goes down unless of course your team is really bad, or the enemy Defense is really good. If you're without Uber, you can shoot Crossbow bolts or Syringes at it, but you're better off retreating if you can to build Uber.
Sniper - Shoot the damn thing. Your Sniper Rifle is one of the safest weapons, not only to kill the Engineer, but also his babies from afar. You can one shot a mini and two tap a Level 1 and 2, though a 3 will require a bit of charge to take down. If the Engie gets annoyed and comes after you or sends his team; duck behind your team for cover.
Spy - Sap and shoot, Stab and sap; all good tactics, but not reliable for newer players, and since the Amby got nerfed, shooting from afar isn't a great option either. One of the best things a Spy can do for his team, is sap the gun right before a push, and harass the Engineer during it so he has to focus on you instead of his baby. During a big push; he will either get backstabbed ignoring you, or his gun will go down trying to save himself. Either way; you'll do well.
Technically, the Kunai is actually a better pick. Sure, the YER on paper is the best, due to the Sentry gun not tracking you; but you need a lot of precision and planning for it to work due to the reduced cloak, which makes it much easier for enemies to predict and pick you off.
The Kunai, while dangerous, can let you tank Sentry fire long enough to escape. And of course, Stab and sap just removes the danger entirely; same with Sap and shoot. Just play it smart, the YER is okay, but it's benefit only works on newer Engineers. I've never gotten it to work effectively on smarter ones as they know what to watch for.
