You can try to pace your shots and predict where they're going, or how they'll try to act unpredictable (ironic), but it's intended to be a fight in the Scout's favour.
There are a lot of things that make grenades different from other projectiles. But the main thing for me was learning to lead my aim slightly left, because grenades appear to the right-side of the crosshair. After that, it felt easier to make accurate shots, and then all I really needed to work on was learning how high of an angle to shoot if I wanted to make longer-distance hits.
Loch is alright, but if you're trying to learn how to make hits, the projectile speed will throw you off.
Loose Cannon is a totally different weapon that requires different skillsets. You end up trading away a lot of your general DPS for very strong spikes of damage, if you can time the fuse right.
