It's a reference to "Chicken", a supid and incredibly dangerous game people have actually done in real life.

Usually, you'd stand on train tracks and wait for a train to come by. The purpose of the game is to get out of the train's way before it hits you, but you outlast everyone else on the tracks too. Basically, be the last person to get out of the train's way and don't die in the process.
