For Soldier, Doe is not his real last name. It comes from his fake name "Jane Doe" AKA the default name for unknown female people/corpses.

Spy and Pyro kinda have to remain unknown (It's part of their mystery)
And in the TF2 comics, the Devil refers to Medic as 'Mr Ludwig', so Ludwig is very likely his surname
