Does anyone know when Valve restocks the Valve Store?

I'm currently looking into some sold out items on the valve store that I want to spend some money on but of course they are sold out. I'm wondering if any knows of previous items that have sold out and been restocked and how long it took for them to be restocked.

Here are the items I'm looking to buy.

Not sure on the Dog Tags and Archimedes, but I'm pretty sure they said the Spycrab plush won't be coming back.

Damn. I was hoping to buy it from the Valve Store for cheaper plus the Steam member shipping discount while also guarenteeing I get the product I order in perfect condition. I guess ordering from Walmart or something won't hurt.

I don't understand how a virtual item can "sell out" or have a limited amount. It's a virtual item that doesn't really exist, you can have as many as you want! Same with Steam emoticons and stuff. How can they "run out"? It's not as if they're things you could buy on eBay or Amazon.
