How do you crouch in non-VR?

Unless you add an animation override, you can't.

You don't. The Non-VR experience is very limited... one of my gripes, but I hope this will be addressed. Eventually...

You also cannot rotate items when holding them in non-VR

There is a way now, just press C and Z to prone
