The problem with age verification post update vid
Honestly while it is good that they are listening, there are still several problems with it. For instance deleting isn't a magic cure all. Data recovery tools work for a reason after all. Think of deleting stuff on hard drives and such as more like putting a document through a shredder than erasing it completely. it effectively destroys the information but people can still go into the trash and tape those shredded pieces of paper together. This may sound paranoid but this is exactly what happened in data breaches of Age Verification systems in other countries its in use. Apron investigation it was shown they did indeed delete the information used to verify age almost instantly but in the data breach the hackers were able to piece that information back together.

This is inaccurate. "Deleted" sectors are marked as "free to overwrite", and once they are used again then the old information is truly gone.
Note: disk wiping tools work by overwriting (and then "deleting") everything on a drive.

Persona doesn't use off the shelf computers, they have server farms with Petabytes, Exabytes, Zettabytes and maybe even Yottabytes ( yes, that's actually a thing, one trillion terabytes ) of drive space... it's not like it's overwritten that easy to make it "truly" gone"

I don't know what scale they operate on and how many drives they have in their arrays, but I can say that those drives will be in frequent use to justify their purchase.

Any database is at risk of a data breach.
The best protections you can ask for are strong consumer legal protections (like GDPR), and the data being handled by companies used to handling sensitive information (like Persona).

So basically the issue now is...

If we wish our data to be rubbed off, you still have to worry if they really rub you off from both ends? Understandable. But even if they do just that how can we even sure they did just that? Proof video they deleted it? Screenshot? Email saying "yeah you're off our hook now, good day sir?". Let's just say I manage your data and then you ask me to purge it, and then I did just that and told you it is done, are you still feeling paranoid even if the confirmation coming out from my mouth? Honestly I would still felt paranoid.
