You will have to find the source assets elsewhere or make them yourself.
It may not be true, but pulling avatars from VRC's servers or out of loaded memory is ripping and highly against TOS that will lead to a game ban if you get caught. Could even lead to other problems as if the original creator learns that you ripped their model they can ask VRC for your avatar to be removed.
OP. It took me no more than 10 seconds to find a model. It's paid and costs $25, but it is made for VRC and should be ready for upload according to the listing.

Unfortunately, this is not what I want. I'm looking for the same model from the video.
Then attempt to get in contract with who uploaded it. Have someone else use the avatar to find who uploaded it, send them a friend request, check their profile for a possible Discord link, and talk with them about getting a copy.
Yeah this one here, don't rip avatars please. Just talk to them.
