From my experience, Red's romance is the most interesting. Some really fun lines in there. But that's just me. Play who appeals to you the most. Don't worry about who is ideal and all that.
As for who works well together, they did a great job of allowing all the companions to find ways to connect. They are all very mixed morally and so you don't often have to worry much about "good" and "evil" companions. Sebille and the Red Prince actually have some interesting interactions (that I won't spoil) despite their quests lightly conflicting which just shows the care they put into making all the parties mix well in any combination.
Fane and Ifan are so strongly tied to the main quest, I personally consider them to be poor companions for that reason. Its probably also partially biased because I find Ifan incredibly boring as a character and simply don't like Fane. I feel like most of the love for Fane is due to his connection to the story, not because he's actually a good character. Fane has literally all of like 3 objectives to his story all game long. They're pretty big, but there's just the few. From the start its just "get to act two" and once you do the thing in act two its literally "beat the game", that's it. Beast is the same, but he's still separated from the main story and brings something new to the table. Everything you learn from Fane you can learn without if you pay close attention.
I'd break down Ifan's objectives like Fane's, but I never finished the game with him on over 1000 hours. I already don't have much interest in him for being a basic human character in a game that offers options, basically anytime other races are available, I'll never make a human. Can play a human in any game. So for me, the human has to be quite interesting to be worth my attention. Lohse succeeded there, Ifan failed. So yeah, there's definitely bais there. If you agree with why I'm biased, then he's probably not a good pick. If you have no problems with playing as/with humans or find him interesting, then play him.
This is not Dragón Age or Baldurs Gate 2... they barely talk... this Game isnall narrator, you main talking and.... thats all
