Undead don't eat. Furthermore, the concept of passing down memories through consuming flesh is not new and I think it wonderfully fits the elves in this universe as they are long-lived (how long exactly we do not know yet). So naturally they want to preserve and impart memories. Another plus is that it's actual consuming of flesh, and not some magic mumbo-jumbo ♥♥♥♥♥♥♥♥ like we usually get in an elf fantasy setting. It makes them really interesting and will probably open some really cool paths to follow story- and conversation-wise.
As for "Why can't I eat the one who can destroy collars to find out how to do that myself" - elves don't get access to everything the deceased knew. Unless he was intensely focusing on something right before his death, or some event left a huge mark on him, it's more of a blur of years and years of daily life.
So if you eat the blacksmith, you'll find out if she was happy or not, if she was longing for someone or maybe the name of her nemesis, but you won't get every detail of intricate process necessary to remove a collar.
Lore-wise? I think it has something to do with the emotional content of the owner's dying moments. There's a mini-quest thing where you find a dead elf who apparently thought particularly hard about where she stashed her treasure before killing herself so that another elf could find it.
Ah, I get your point. That seems fair like that. Still I'd love to be able to get more lore through body eating. But if, as Bardcore said, each body parts are very strong healing items, it would completely unbalance the game I guess... I don't really know how they could work around this idea :/ Well, we'll know later !
I think they should not tell you what you'd get, because you don't know who the person you eat was, so you don't know what you'll learn. It would leave some things to discover, whereas if you know before eating what you'll get, there would be no meaning in discovering the game by yourself. They could directly tell you everything there is to know, which would be quite sad imo :(
Just a silly question on the corpse eating, how does it work or being use? Is it just possible by simply clicking on each corpse or there is a skill or hotkey needed to eat a corpse? I am not sure if I have been eating each corpse or I did not at all. (My main character is Sebille/Elf).

Having a character with all the benefits of every class = absurdity
You can only eat body parts that you can find on some corpse as loot at the moment. Dont know if the devs intend to change it though (that was my main complaint on this topic^^)
