Larian has not yet made any attempts to improve upon the lackluster itemization in D:OS.
I feel with you, I also like variety in looks. I despise games like Dragon Age Inquisition with one whole-body armor slot and a lot of "different" armors which are all without exception of the Shirt-and-Pants-style.
In DOS2 it's a bit better. Although the biggest differences come from the races. I like the peculiar elf style for example, while humans look quite normal (and fat unfortunately). On humans you can only see slight variety between leather and scale, while mages wear long skirts. That's ok.
In the character creation process you see a lot of different armors, even a skirt-like for human males. I hope they are in the game as higher level armors.
