based off vague memory, I would say the differences basically are that 1 had more light hearted dialogue, which I liked fine, but apparently bothered some people, and also some combat mechanics.
you have various skills + spells that take action points to use, and while you are kind of soft capped at 4 ap in dos2, you can increase your ap in dos1.
also the cc mechanics differ.
in dos1 you could disable an opponent (or be disabled) thru knockdown, stun, etc, but they nerfed that a bit in dos2 by introducing armor.
armor acts as basically a buffer health pool split between magic and physical which must be erased before any cc effect is applied.
so, basically less first strike cc.
I guess there's a minor story concern as dos2 makes some reference to dos1, but it's not critical to play them in order -- that's just color.
As someone who suffers from anxiety I much prefer light hearted tones, such as Mario, A Hat in Time, much of anime, etc. They just make me feel happy.
But I have heard that the first hours of DO1 were pretty bad. Why is that?
basically, the 1st part of the game has you in this town and there's a bunch of talking to all these denizens and getting the usual fetch it quests, etc to level you up a couple levels.
little in the way of fighting until you level up and leave town, which I think had some ppl bored tbh.

the 2nd game is pretty similar, tbh, but I think they did add in a few more fights
The origin characters in DOS2 help a lot with providing hooks and motivation in the opening areas that intersect with the primary goal of escaping.
As other said, dos1 maybe quite boring at the beginning.
Glad I start at dos2.
It's beecause the early game is taken up with what some people consider an interminable and boring murder mystery and a number of fairly banal side quests that you have to grind through to get to level 4 before venturing out into the main game world. If you don't you just get slaughtered on sight outside the town gates.
"Light hearted" is not the real issue with the writing and atmosphere in DOS1 - more cartoon-y and cheese-y. DOS1 deliberately doesn't take itself seriously at all story/character/dialog wise. It's more Tom & Jerry than it's Game of Thrones. Everything is a cheesy joke except the combat which is brutal until you get the hang of it.
DOS2 is not that serious either, there are still plenty of jokes and cameos in it, but doees have a more serious edge to itr, it's somewhat darker in tone.
Both games are very good, but DOS2 is, as onen might expect, significantly more polished in pretty much every department.
My advice would be if you want to set aside 200-300 hours of play time for these games starrt with DOS1 and wait for DOS2 to get discounted down the track. Otherwise, go for DOS2.
Sounds like the beginning of DOS1 is everything I hate about RPGs in a nutshell.
Here us why.
1. DOS 1 Forces you to steal to get cash for the most part.
2. Mine feilds are massive/huge/common in dos 1. ( Im not joking, if you could plan princes diana from the uk before she died to help you get rid of land mines, you would LOVE to hire her to get rid of the land mines in DOS:1). Some parts will take your more then 1h to finish just because of land mines.
3. There are more puzzles.
4. It WILL take you longer to get out of the first town compared to the first one.
5. ... time for bed.. peace out.
