We will get more arena fights in Act II. You don't get a reward until You are the 'One'. And you cannot become the one with just one fight. Yes there are inconsistency in the quest log. But what I am saying is probably true.
I was playing with a friend and was sneaking when she accepted the quest. She got teleported in the arena alone, won, and moved out and none of the NPC's seem willing to remove the collar.
Or am I missing something?

If you don't select the right dialog you'll have to save the seekers leader from the armory to get them removed.
