(to actually answer your question, origin characters have more in depth stories. Custom characters basically don't have stories other than THE story.)
You know that as you level you can pick any series of powers right? And there is a point where you can completely respec your character and pick all over again.
So unless you are referring to origin stories etc. then once you can make it through to the respec point , you don't need to restart.
Ha, yes I'm torn what race/origin my main character should have. I want to get a well rounded story experience for my first playthrough. I know already what class/skills I want to use and being able to respec is always great. :D
So far once the characters are in your party, you experience their storyline. I don't think anyone knows the full story of them all, you would be left with I think one or two odd characters out, since you just have a max of 4 in your party.
So far Fane is interesting, though different to play because he can't be healed with normal restoration spells
If you want to see all the content, make a custom char twice and switch out your companions for each playthrough. ^^

And Sebille looks like a Giraffe in game. Personally I'd pick the one who looks better in game. :P
But every time you load a save, a manly woman looks back at you... xD

Getting eaten by an elf isn't as sexy as it sounds in this game, sadly.
