Party Management and AI
I went into party management and was prompted "You have just assigned a character (Blah blah) and they must be reasigned to continue their story arc" with the only choice being accept.

Can I undo that?

Secondly, Can I set the other characters on "AI" so I can focus on my own character and trust them to act their role? how.

You can just move the character back to being linked to the original person you talked to the party member with any time that you want to continue that character's story.

in most cases theres a "!" over their head when they have character story things to say. However there are case where certain NPCs will interact with that character differently.

as for acting as AI, the best you can do is change the formation as far as I am aware. they will follow you if you chain them to your character by dragging their portrait over the desired leading character.

Hope this helps.

https://www.nexusmods.com/divinityoriginalsin2/mods/236 This is a mod for Divinity Original SIn 2 where you find skillbook at the first Waypoint unlocked in Fort Joy ( Fort Joy Beach I guess)
The Skillbook of AI Control gives you 2 skills - AI Control and Restore Control . This will grant you the ability to cast AI Control for 0 AP on your allies and the effect is obvious . Hope this will make the game more fun for you , certainly did for me . Controlling 2 Characters Manually and leaving 2 for the AI to handle is being a great experience so far .

It's also worth meantioningthat installing this mod is really simple . You just need to drag and drop the AI test file on Documents/Larian Studios/ Mods folder (I think this folder is created automatically by downloading mods from the Workshop , if not , create it manually and drop it there) :D .
