How should I build a metamorph

I am new to definitive edition and didn't really pay attention to the meta before or in the original. I want to make a good character though

Polymorph is really more of a support set for other classes instead of something you just take on its own. That said, some of the skills scale off of Strength (Tentacle Lash and Flay Skin), so a STR-based warrior is a good fit.

Yeah you don't focus around polymorph. Polymorph is a giant bag of tricks suitable for a wide variety of situations, but with that brings with it a lack of focus that prevents it from being able to accomplish much of anything on its own.

You stack speed and use spear weapons.

I build metamorph on my tank (1h+shield). It works great for her since Tentacle Lash (very good damage) is a solid hitting spell and the ability for her to grow wings and fly to locations or petrify targets in close range is nice.

A STR build is good, but it can be fun to play with the spears. As said though, Polymorph isn't much of a primary skillset. The Finesse based spear builds can be fun though. At this point your character could do anything.

I believe that all Warfare skills scale with your weapon, so you can make a FIN-based, spear-using Warfare/Poly melee fighter as well, if that's your bag. Spears are more rare than STR-based weapons, though.

But are also arguably more fun, especially if you abuse their range. 50% cleave becomes your best friend as well as roots, that 2H sword can't hit a spear user if the spear user attacks from max range and the 2H guy is rooted in place.
