Which mode should I go with?
I just got the game and wanted to play a single player campaign. There seems to be 4 different modes and I can't decide which. I'm leaning toward explorer and story mode. I like a challenge but nothing way too difficult where min-maxing is high priority

No, plot is all the same. It is called "Story Mode" not because it provides more Story elements, but because enemies are so weak you will win every battle without even trying, and can just walk around and talk to NPCs without worrying you may end up with fights you can not win.

The Explorer mode is a bit more difficult but enemies also suffer from penalties compared to Classic (normal) mode.

In Classic mode you do have to build your party quite well, you will need to get everyone good equipment, and you can not really fight any enemy who is higher level than you. Notice that this game has no random enemies so you can not grind for xp and loot.

Go with classic mode first. No min-maxing is needed here.
If its too hard for you, you can always go down to explorer.

No, the only difference is how strong you and the NPCs are, and in Tactician and Honour mode you cannot switch difficulty. As for Explorer mode and Classic mode, you can always switch between those two if you picked either.

Story Mode if you want the game to be easier.
