What companions should I pick for a first playthrough?
I'm gonna make a custom character since I'm really bad at roleplaying as anyone other than myself outside of tabletop games, so that leaves me with 3 of the premade characters I can take with me.

I don't really care about who's mechanically the best, I'm looking more for their personalities/how they tie into the story. I like characters that are really snarky and sarcastic, and since I'll always go for the most pragmatic options/whatever's best for my own personal gain rather than picking based on good/evil, I'm hoping there's characters who support those kinds of choices. I also like philosophical characters because I'm a pretentious wanker, but this doesn't strike me as the sort of game to have a Dak'kon or a Kreia in it, so I'm not too hung up on that.

I would suggest Lohse, Fane, and then either Red Prince or Sebille. I actually would place Red and Sebille higher up than Fane, but the two of them have some conflicts/overlaps in their story. They can both fully complete their stories, but there is a side quest at the begining that takes some crafty maneuvering to get through, and a boss near the end(ish) of the game that is important for both, and you can only really have one of them talk to that boss before combat.

Fane, the Red Prince, Ifan, and Lohse would be my choices for 'max story'. They each come at it from various angles. Not having Fane in the group would be the biggest miss since he's tied to the events that set everything going.

The Sebille/Red Prince conflict is the biggest conflict, although there's also some between Sebille and Ifan. (Again, her habit of wanting to kill people that the other NPC needs to talk to.)
