If you alraedy played the game then you probably know how warrior type builds can be extremely repetitive and how ranger builds tend to be so broken you just forget about skills because you dont even need them. So if i have to guess i would say the majority of ppl playing this game had a really good time playing mages of various types, maybe 2 lone wolf mages with different schools for more variety.
If fun is having more stuff to do and being able to aproach fights diferently each time then of couse go for a mage, you can easily make a powerfull mage focused on attributes (polymorph) and just enough in each school to learn the spells needed, by endgame you will end all fights in 1 turn with ease even on tactician, but the journey can be fun.
I also enjoyed themed builds or parties, i play with lone wolf all the time so i just have 2 guys (or 1), and i tend to mix the builds to ad a theme and roleplay, the most broken combination i had was lohse as a aero necro mage with summons plus ifan full wayfarer, mostly finn and abusing the hell out of the crafting system so both characters were able to deal both types of dmg and excel at both. CC capabilities were off the charts.
Similar party was Ifan as a physical ranger, and sebile as a rogue, this one was so absurdly overpowered i had to leave it, but if you dont use chameleon cloak it might actually be fun and challenging in certain fights.
So if you want some fair chalange - do as developers wants - manage your armor bars
It means - go Hydro + Earth and pick some other Armor buffing spells. Dont use any saving-spells exept armor buffing :)
Btw what is better now after patch Couple of lone wolves or full party?
This is not a super active build where you have to manage a lot of thiungs, but it gives me great joy when people attack me and die.
And while some people really enjoy managing the CC of ice and air builds, I find all of that incredibly tedious. Air especially can be very messy, with water stuns hitting you, your own guys, and making a huge mess of the battlefield. So it really just depends what you personally enjoy.
This build is more fun than it sounds, but i dont see how can it work without going solo, unless you go full invisible party while your tank deals the retribution damage, in wich case you are indeed playing solo anyways.
