I would like something similar to Fable 3. Where you can stand back and even let the void win, and you yourself become some god-void-ling.
Choosing a god that's not of your own race would make for rather weird tea-time conversations. Especially in case of the lizard god who is openly a hateful racist prick.
On Astarte. I wanted to say that perhaps Astarte was sort of forgotten - a good thousand years can do that, especially when damned fools record knowledge on pulped tree :)
But I don't think the connection between DOS and DOS2 is as rigidly defined. Say, the End of Time does not acknowledge events of DOS2. Because of course it doesn't - the game itself hadn't been made yet. But if we're looking for continuity (a hard thing to come by when time travel is involved), the big bad Void being on the loose yet again ranks quite high in terms of existential importance. And because the End of Time even is as such, it would require DOS2 to have a canon ending (which it does not have) and one in which the Void is defeated at that.
On a separate note, you mention that the Seven may be demons. The lore is not very clear on how they appeared, but I don't think they entirely fit the description. But you know what was the first thing I thought seeing Astarte in DOS? "What's a ♥♥♥♥♥♥♥ demon doing in our Homestead!"
Finally, letting the Void win and destroying the whole creation just because you have a chip against your god? I'd say not even Rymrgand is so hateful as to give such a reason :)
Also, all the gods are supposed to be rather unlikable, with maybe the exception of Lohses depending on how you respond to him.

Did you finish the game? Pretty much everything you have problems with here is addressed by the end of the game.
Except for 'not being able to chose your god,' because you did get to chose. When you chose your character. Choosing a god of a different race would just be silly.
As for the rest... yeah, play the game. The story twists and turns several times along the way, as do the roles of various characters/groups/etc.
