If you haven't, it will take some getting used to but its managable.
My recommendation is to do it, it doesn't drastically change your game at all.
It doesn't change much from regular characters other than that, although being immune to deathfog can come in handy
1. Always keep gear equipped in your head/chest/legs to keep people from freaking out about your undead status. It doesn't matter if you can see skeleton parts or not. All the game cares about is you're wearing something in those slots. You can even use the helm hiding feature and be fine.
2. You can't heal your undead character with normal healing magic or food items. You can heal your undead with Necromancy spells, and poison from any source. You can also poison food using the crafting system and eat that. Poison is oddly plentiful in this game so this isn't as big a limitation as you think.
3. Get an Ooze Barrel (the poison barrels) and have one of your stronger characters carry it around for you. You can use the barrel infinately in the crafting system to poison food items so you can eat them, as well as make poison potions when combined with empty bottles. Use those as healing potions for your undead guy.
Both good options. My first playthrough was a custom undead rogue and I had a great time.
You can also take Fane as a companion if you wanted to and see his story that way.
