RoA2 has much better "bosses" with wider variety. The way you interact with bosses has expanded and become more fun.
RoA1 has the better stages. They are a bit more complex from the perspective of freely rolling through them. RoA1 stages also feature 3 keys, which you collect for the sake of unlocking certain moments (and getting an achievement I believe).

While stages in RoA2 are simpler from the standpoint of rolling through them, the streamlining makes for more effective implimentation of defenses, which is what RoA1 players wanted improved.

The art direction in any ACE game is going to be the showcase but UE4 has allowed their artists to make an even bigger impression. RoA2 is simply gorgeous and awesome to look at and doesn't have the cascading shadow problems nor the super noisy ambient occlussion ACE titles suffered under UE3.
RoA2 is also less tinged with academia but what do I mean by that?
