This isn't that sort of a game. You're following a character (that you don't see 90% of the time), doing stuff and playing out a story in the character's life. If you want to be someone else, maybe play another game? I dunno what to tell you. That's like going on Life Is Strange and complaining about not being able to customize Max to make her look like you. Max is a character. It isn't that sort of game.
Honestly if I were to change Beatrix I would wish to be BOb or some other "3-slimes-in-a-trench-coat" thing!
Modding is not easy, especially for games where there is NO MOD SUPPORT. Thus if you think it is easy, you should do it yourself.
First off, there are probably no other humanoid models in the game because we never see any of the other people except for 2D images, this means you would have to create 3D models. Can you do that? I think you don't seem to understand that modding is actually a very complicated thing to do, and games that don't have modding tools require people to be able to code and develop the tools to make things for a game. I know this because I have modded another notoriously difficult game to mod, Dragon's Dogma Dark Arisen.
I totally agree with you, I'd love to be able to make myself, but this game is about Beatrix and has a story surrounding her and her character which means that a character creator isn't really important. I'd love to have a free mode where you don't follow any story and you can create a character thought, would be super neat.
