It just takes some time. I'm not sure how much time but it shouldn't be too long.
As for food & type, you need a Master Gordo snare to dictate that I think. "The Master Snare is guaranteed to snare Gordos that favor the food that is used to bait it."
The bait determines slime type. You'll get the gordo that favors that food. so things like pogofruit and carrots (that nothing favors) get pink gordos.
The gordos take the normal amount of resources to pop and will stay until burst.
Gordos snared are sorta funky but there's 3 pools that may get selected - exact odds vary by snare level.
Pink - literally contains pink gordos and is the default if nothing else would be selected.
Food group - a pool of gordos based on your progress into the game and gates unlocked. This gets associated with the food group of the item put on the snare. For example a hen hen can snare any meat eating slime potentially, though the exact pool depends on what gates you've opened.
Favoured - the pool containing the slime who favours the food item placed. This slime will also appear in the food group pool (if it is progress unlocked... which normally is an irrelevant point but just a little detail for odd cases when you gate skip)
The basic snare has a 1 in 3 chance for each of the 3 pools to be the one selected - if its applicable. (Not entirely sure if the favoured is removed so its a 1/2 chance if it wouldn't occur, or if it would convert to an extended pink making it a 2/3)
Alot of this isn't exactly relevant but just for reference your cuberry snare could snare a phosphor, a pink, or s honey quantum or dervish if you have the appropriate gates/teleporters unlocked.
